Awarded two stars in the Michelin Guide, the humanist and visionary chef composes a poetic culinary score that blends Creole and Mediterranean influences.      A star-studded culinary journey...    With his roots in the Caribbean as his foundation, Marcel Ravin honored by Les Grandes Tables du Monde,  has sculpted a blend of flavours between his native Martinique and the shores of the Mediterranean. Open to the world, his sincere, crossbred cuisine is built around the seasons, as much as it reinvents itself according to inspiration. Fruit and vegetables from the Monte-Carlo Bay Hotel & Resort organic garden and fish from the "Mr Goodfish" charter, illustrate the Chef's commitment to sustainable and responsible gastronomy.   From classics to one-off creations...  Signature dishes, such as Œuf Monte-Carlo, manioc, truffle and maracuja, or daring new dishes, such as Poulet Madras "Boucan d'Enfer", feature on the menu. Renewed every three weeks, the menus offer a rich universe inspired by the garden, nature and encounters. The culinary journey continues with food and wine pairings, as well as an original combination of food and non-alcoholic flavours.    An ode to life and nature...   The design, orchestrated by Alexandra Saguet, evokes the five elements through wood panelling, plant ornaments and touches of metal. Inspired by nature, the décor in the dining room offers intimate spaces in harmony with Marcel Ravin's culinary universe. The open kitchen showcases the effervescence of the brigade, right at the heart of the action. On the terrace, the stage is set against the soothing blue of the Mediterranean.      La Table de Marcel, a place of expression     A "restaurant within a restaurant", La Table de Marcel offers its privileged guests an exceptional gastronomic experience, combining culinary arts with culture, whilst providing a unique opportunity for close contact with the Chef and his team.   La Table de Marcel stands out as a place where emotions come to life, a space imbued with daring. The Chef wants every guest to feel "as if on a cloud, floating", experiencing memorable emotions. La Table de Marcel represents the very essence of Blue Bay Marcel Ravin, and the Chef wants to turn it into a culinary laboratory in perpetual research, where daring guides a cuisine where nothing is predetermined. Passing through the doors of Buddha Bar Monte-Carlo is going on a journey to far east Asia. The warm colours, Buddha statue and lounge ambience are perfect for relaxing and having a great time. Thai and Japanese cuisine are showcased in a menu that mixes Asian flavours.   The breathtaking decor includes a 7-metre-high ceiling, different kinds of wood, sculptures, cornices, stucco and gilding. Not to mention an impressive host: a colossal Buddha from Asia, in a meditation pose. Two open-air terraces complete this other-worldly setting. The best way to enjoy the sweet summer nights!   An elegant musical design… At Buddha-Bar Monte-Carlo, Papadia Donato, aka DJ Papa, is an iconic figure. Behind the booth, the resident DJ overlooks the Lounge Bar, distilling a minimalist musical fragrance, a subtle blend of lounge, chill out and world music, delicately embellished with ethnic or electro beats.   A restaurant with exotic flavours... Enjoy sashimi, maki, sushi and other Asian culinary delights from China, Japan, Thailand and South-East Asia while sipping some sake or signature cocktail.  With the help of his brigade our Chef Éric Guillemaud combines Asian flavours with French gastronomic excellence.   The story behind it all: the bar stands where the old Cabaret de Monte-Carlo used to be at the beginning of the century, a theatre/concert hall in the Casino de Monte-Carlo itself.

On the one hand, the soil of Monaco's hinterland where the vegetables come from, the fire of cooking at just the right temperature and the extraction techniques developed by Chef Yannick Alléno. On the other, the mastery of the water and air contained in each sushi, thanks to Chef Yasunari Okazaki's sensitive and refined movements. In a setting designed by Laurence Bonnel-Alléno, the two chefs develop the art of sushi, guided by the four elements.    The art of Sushi  Chef Yannick Alléno's modern French cuisine blends with the Japanese tradition of which master sushi chef Yasunari Okazaki is the custodian. L'Abysse Monte-Carlo has been conceived as a world of sensations and emotions at Hôtel Hermitage Monte-Carlo. The four elements respond naturally to the four seasons, bringing exceptional sushi out of the Mediterranean.   Tradition, Innovation and Sustainability   Chef Yasunari works closely with fishermen who practice sustainable fishing methods. Beauty and respect for the product are essential in the art of sushi. Spring, summer, autumn and winter fish, Chef Yasunari Okazaki evolves the menu according to the seasons and the fishermen's catches.   This philosophy is illustrated in the restaurant by the gyotaku technique. Developed by fishermen, this Japanese technique used to preserve a souvenir of their catch, by applying ink to the fish before affixing it to washi paper. At L'Abysse Monte-Carlo, this memorable imprint is the one left with the customer, as a souvenir of the fish tasted that very day.    A mental and gustatory sanctuary  Designed by Laurence Bonnel-Alléno, the setting inspires a serenity that transports guests into a timeless universe. Textures and materials such as wood, marble, travertine, velvet and ceramics are combined with lines that are sometimes soft and curved, sometimes strong and rigorous. The artist infuses l'Abysse Monte-Carlo with contemporary Japanese inspiration, creating a haven where the mind can fully revel in the culinary experience, in a soothing and refined atmosphere.
